The Best Pumpkin Bread. Ever.

This bread is so moist and delicious that:

- My 5 year-old begs me to make it regularly and chooses a slice of it over a cookie

- After making a loaf for my sister, she told me that she woke up in the middle of the night craving it

- My brother hid it from his fiance when she came over to his apartment for dinner so that he wouldn't have to share


In addition to all of my anecdotal evidence for why you must try this recipe, you should also know that:

- The bread grows better with age - it is even more moist the 2nd and 3rd day!

- The batch is huge, so it makes great gifts for friends and neighbors; everyone can have their own loaf!  

- It has pumpkin in it, so really, it is a health food


INGREDIENTS

1 (15 ounce) can pumpkin
4 eggs
1 cup vegetable oil
2/3 cup water
3 cups sugar
3 1/2 cups all-purpose flour
2 teaspoons baking soda
1 1/2 teaspoons salt
1 teaspoon ground cinnamon


DIRECTIONS

Preheat oven to 350 degrees F (175 degrees C). Grease 5 mini loaf pans (also makes great muffins). 

In a large bowl, mix together pumpkin, eggs, oil, water and sugar until well blended. In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon. Stir the dry ingredients into the pumpkin mixture until just blended. Pour into the prepared pans.

Bake for about 30-40 minutes in the preheated oven. Loaves are done when toothpick inserted in center comes out clean.

I have been making a similar recipe- but I have used applesauce instead of the oil and it is SO moist and yummy that way too! AND, that makes is even more a health food, right? :)

Do you know if you do not bake all of the batter right away, can you leave it in the fridge for a few days like cookie dough?

So did you bake all 10 loaves plus those giant muffins at one time or was your oven on all day? I am just curious because I only have one loaf pan but I think it is time to buy more! Especially if I want to give them as gifts and eat them! ;o)
