How to make marshmallow lollipops

I've had lots of inquiries into my marshmallow lollipop post and now that Valentine's Day parties have rolled around, I can finally show a quick tutorial on this simple treat. 

These are perfect to send to school because while small enough to create minimal mess (Does anyone else hate cupcakes for this reason? Let me clarify - I love cupcakes. I just don't love classrooms of 4 year-olds eating cupcakes.), they are fun enough that kids will remember it. I've made them as favors for birthday parties and now I am sending them as an adorable alternative to Hannah Montana or Jonas Brothers or Camp Rock or whatever else Disney can endorse Valentine's Day cards.

Begin by attaching marshmallows to the ends of lollipop sticks. These inexpensive sticks are easy to find in the candy making aisle at most craft stores - I've even picked them up at Wal-mart. 


Melt white chocolate and add a few drops of food coloring. I have found that almond bark (the square melting "chocolate") works the best because it dries firmly within a couple of minutes. 


Dip marshmallows and spin off excess coating. 


Sprinkle. Sprinkle. Sprinkle. 

Have I ever admitted my sprinkle addiction? I have 30-40 types of sprinkles. Even farm animal sprinkles. I am not ashamed. 

Once adequately sprinkled, I place the lollipops in a heavy glass, and set it in the freezer for 2-3 minutes (just until set). 


Then, I package them in clear bags tied with ribbon and label them. Personalized Valentine's Day stickers bring the cuteness to a whole new level. Click here to get your own stickers.

I have a friend who made these last year for her daughter's class on Valentine's Day, but below the marshmallow on the stick, she put a bright red strawberry. It was really pretty with the pink chocolate coating.

I love sprinkles too. This afternoon my hubs and I went to the library and we stopped to get ice cream--mine with sprinkles, of course! Without the sprinkles the ice cream seems so plain!

I just finished making these! I used popcicle sticks (I found coloured ones at the store) and used crushed candy instead of sprinkles.

Hi, I'm a friend of Krista B. I frequent your blog for cute ideas, and I LOVE this one. I made these for a baby shower (blue tinted chocolate with sprinkles) and for my sons class for Valentine's Day. For the Valentine's party, I used the large pink strawberry marshmallows and left the white chocolate just white and then sprinkled with cute white, pink and red heart sprinkles. They turned out SUPER cute and were a big hit! Thank you SO much for the great idea! If I get around to it, I'll send Krista a picture of the ones with the pink marshmallows to forward on to you...so fun!

i made these for a valentines event and they were a HUGE hit. i made mini cupcakes instead of marshmallows..because i don't really like marshmallows but quickly found out that cupcakes take substantially more work!

ok, so this might be a dumb question, but i tried them and my chocolate got 'lumpy' as soon as i added the food coloring, so i couldn't dip the marshmallows. I tried heating the choc. in the microwave as well as on the stove --could it be that my food coloring is 'old' or have others had the same problem? THANKS!

FYI Food coloring makes white chocolate clump. You have to use icing coloring for it to work.
